A good way to preserve the abundance of the harvest is to remove the water from fruits, vegetables, and herbs—water that is just as necessary for their growth as it is for their decay. When this water evaporates through drying, the microorganisms that cause spoilage lose their source of sustenance, and the dried produce becomes shelf-stable—albeit with some loss of vitamins, but concentrated into a powerful dose of minerals and dietary fiber. If autumn brings sufficiently warm temperatures, you can dry them outdoors. You can even dry them on a radiator or in the oven, provided it can maintain low temperatures between 35 and 50 °C. The easiest method, however, is to use a food dehydrator.
